Ingredients
- 1½ lbs (680 g) boneless, skinless chicken breasts or thighs, cut into bite-size pieces
- 1 cup orange marmalade
- ½ cup bottled BBQ sauce
- 1 tablespoon oil, for cooking
Instructions
- Prepare the chicken: Pat the chicken dry and cut it into bite-size pieces. Season lightly with salt and pepper if desired.
- Cook the chicken: Heat the oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 6–8 minutes, turning occasionally, until browned and cooked through.
- Make the sauce: Reduce the heat to medium. Add the orange marmalade and BBQ sauce directly to the skillet.
- Coat the chicken: Stir well to coat every piece. Simmer for 3–5 minutes, stirring frequently, until the sauce is hot, glossy, and slightly thickened.
- Serve: Remove from heat and serve immediately over steamed white or jasmine rice.
