Ingredients
Salad
- 1 lb cooked, peeled, and chopped jumbo shrimp
- ¼ cup finely chopped red onion
- 1 large tomato, diced
- 1 large avocado, diced
- 1 teaspoon extra-virgin olive oil
- 2 tablespoons fresh lime juice
- 1 tablespoon chopped fresh cilantro
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon ground cumin, optional
- 1 small jalapeño, finely minced, optional
Lime Dressing
- 2 tablespoons fresh lime juice
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon honey or maple syrup, optional
- ½ teaspoon Dijon mustard
- 1 small garlic clove, minced
- Pinch of salt and black pepper
Instructions
- Make the dressing: In a small bowl, whisk together the lime juice, olive oil, honey, Dijon mustard, garlic, salt, and pepper.
- Combine the salad: Add the chopped shrimp, red onion, tomato, avocado, and cilantro to a large bowl.
- Season: Add 1 teaspoon olive oil, 2 tablespoons lime juice, salt, black pepper, garlic powder, and cumin. Add jalapeño if desired.
- Toss gently: Pour the dressing over the shrimp mixture and gently fold everything together. Be careful not to mash the avocado.
- Chill: Cover and refrigerate for 15–20 minutes to allow the flavors to blend.
- Serve: Spoon into lettuce cups, serve over mixed greens, or enjoy on its own with lime wedges.
Tips
- Add the avocado just before serving if preparing the salad several hours ahead.
- For extra crunch, add diced cucumber or bell pepper.
- For a spicy kick, add a pinch of cayenne or extra jalapeño.
- Keep refrigerated and serve cold.
