🥓 Creamy Bacon Pea Salad
A classic cold side dish with sweet green peas, crispy bacon, creamy dressing, cheese, and crunchy onion. Perfect for potlucks, BBQs, and family dinners.
Ingredients
4 cups frozen green peas, thawed
8 slices bacon, cooked crispy and crumbled
1 cup shredded cheddar cheese
½ cup red onion, finely diced
½ cup mayonnaise
½ cup sour cream
1 tablespoon apple cider vinegar
1 teaspoon sugar
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
Cook the bacon:
Fry the bacon until crisp. Drain on paper towels, let cool, then crumble.
Prepare the peas:
Thaw the frozen peas and drain well. Pat them gently with paper towels to remove excess moisture.
Make the dressing:
In a small bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, garlic powder, salt, and black pepper.
Combine:
Add the peas, bacon, cheddar cheese, red onion, and parsley to a large bowl.
Pour the dressing over the mixture and gently toss until everything is evenly coated.
Chill:
Cover and refrigerate for at least 1 hour before serving. This allows the flavors to blend.
Give it a gentle stir before serving and sprinkle a little extra bacon and cheddar on top if desired.
🥗 Tips
For extra crunch, add ½ cup diced celery.
You can substitute cheddar with shredded Colby Jack.
For the best texture, add a little of the bacon just before serving so it stays crispy.
