A flavorful, juicy ground meat mixture that works beautifully for meatloaf, meatballs, burgers, stuffed peppers, or patties.
Ingredients
2 lbs (900 g) ground beef
1 small onion, finely diced
3 cloves garlic, minced
1 cup breadcrumbs
2 large eggs
½ cup milk
¼ cup ketchup
2 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
1 tsp smoked paprika
1 tsp Italian seasoning
½ tsp onion powder
½ tsp garlic powder
2 tbsp chopped fresh parsley
Instructions
Combine the wet ingredients: In a small bowl, whisk together the eggs, milk, ketchup, and Worcestershire sauce.
Mix the dry ingredients: In a large bowl, combine the breadcrumbs, salt, pepper, paprika, Italian seasoning, onion powder, and garlic powder.
Add the vegetables: Stir in the finely diced onion, garlic, and parsley.
Add the meat: Add the ground beef and pour in the egg mixture.
Mix gently: Using clean hands, gently mix everything together just until combined. Don’t overmix, or the finished meat can become tough.
Rest: Let the mixture sit for 5–10 minutes so the breadcrumbs can absorb the moisture.
For Slow Cooker BBQ Meatloaf
Shape the mixture into a loaf and place it in a lightly greased slow cooker. Top with your favorite BBQ sauce and cook on LOW for 5–6 hours, until the center reaches 160°F (71°C).
Tip: For extra juicy meatloaf, use ground beef with about 15–20% fat.
