Mushroom Beef Tips
Tender beef tips simmered in a rich, savory mushroom gravy. A comforting, easy dinner that’s perfect over mashed potatoes, rice, or egg noodles.
Ingredients
2 lbs (900 g) beef stew meat or sirloin tips, cut into bite-size pieces
2 tbsp olive oil
1 small onion, diced
8 oz (225 g) mushrooms, sliced
3 cloves garlic, minced
2 cups beef broth
1 can (10.5 oz / 298 g) cream of mushroom soup
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp onion powder
½ tsp black pepper
½ tsp salt
2 tbsp cornstarch
3 tbsp cold water
2 tbsp butter
2 tbsp fresh parsley, chopped, optional
Instructions
Brown the beef:
Heat olive oil in a large skillet over medium-high heat. Season the beef with salt and pepper. Brown the beef in batches for 2–3 minutes per side. Transfer to a plate.
Cook the vegetables:
Add butter to the skillet. Add onion and mushrooms and cook for 5–6 minutes, until softened and lightly browned. Add garlic and cook for 30 seconds.
Make the gravy:
Pour in the beef broth and scrape up any browned bits from the bottom. Stir in the cream of mushroom soup, Worcestershire sauce, thyme, and onion powder.
Simmer the beef:
Return the beef and any juices to the skillet. Bring to a gentle simmer, then reduce the heat to low. Cover and cook for 45–60 minutes, stirring occasionally, until the beef is tender.
Thicken the gravy:
Mix the cornstarch and cold water in a small bowl until smooth. Slowly stir it into the simmering gravy. Cook uncovered for 2–4 minutes, until thickened.
Finish:
Taste and adjust the salt and pepper. Sprinkle with fresh parsley.
