Ingredients
4–6 bone-in, skin-on chicken thighs or chicken breasts
2 tablespoons olive oil
1 tablespoon melted butter
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
½ teaspoon smoked paprika
1 teaspoon dried Italian seasoning
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon dried parsley
½ teaspoon chicken bouillon powder, optional
1 tablespoon fresh lemon juice
3 cloves garlic, minced
½ cup chicken broth
Instructions
Preheat the oven to 425°F (220°C). Lightly grease a baking dish.
Prepare the chicken: Pat the chicken very dry with paper towels. This helps the skin become beautifully golden and crisp.
Make the seasoning mixture: In a small bowl, combine olive oil, melted butter, garlic, lemon juice, garlic powder, onion powder, paprika, smoked paprika, Italian seasoning, salt, pepper, parsley, and bouillon if using.
Season: Rub the mixture generously over the chicken, making sure to coat all sides. If using skin-on chicken, gently rub some seasoning underneath the skin as well.
Arrange: Place chicken skin-side up in the baking dish. Pour the chicken broth around the chicken, avoiding pouring it directly over the skin.
Bake uncovered for 35–50 minutes, depending on the size and cut of chicken. Chicken breasts may cook faster; thighs generally take longer.
For extra golden skin, broil for 2–3 minutes at the end, watching carefully so it doesn’t burn.
Check doneness: The thickest part of the chicken should reach 165°F (74°C) on a meat thermometer.
Rest: Remove from the oven and let the chicken rest for 5–10 minutes before serving.
🍽️ Serving Ideas
Serve with roasted potatoes, rice, mashed potatoes, green beans, carrots, broccoli, or a fresh garden salad. Spoon some of the flavorful pan juices over the chicken before serving.
