Cottage Cheese Oatmeal Pancakes
Ingredients
1 cup cottage cheese
1 cup rolled oats
3 large eggs
1 tsp baking powder
1 tsp vanilla extract (optional)
1 tbsp honey or maple syrup (optional)
Pinch of salt
Instructions
Add cottage cheese, oats, eggs, baking powder, vanilla, honey, and salt to a blender.
Blend until smooth, about 30–60 seconds.
Let the batter rest for 5 minutes so the oats absorb some moisture.
Heat a lightly greased nonstick skillet over medium heat.
Pour about ¼ cup batter per pancake onto the skillet.
Cook for 2–3 minutes until bubbles form on the surface.
Flip and cook another 1–2 minutes until golden brown.
Serve warm.
Optional Add-Ins
½ tsp cinnamon
1 mashed banana
¼ cup blueberries
1 scoop vanilla protein powder (add a splash of milk if needed)
