A simple, hearty beef stew made with just five main ingredients. Perfect for busy days when you want a comforting meal with minimal prep.
Ingredients
900 g (2 lb) beef stew meat, cut into bite-sized pieces
700 g (1½ lb) baby potatoes, halved (or diced regular potatoes)
4 large carrots, peeled and sliced
1 packet (28–40 g) onion soup mix
2 cups (480 ml) beef broth
Optional (not counted in the 5 ingredients):
Salt and black pepper, to taste
1 teaspoon garlic powder
1 teaspoon dried thyme or rosemary
Chopped fresh parsley for garnish
Instructions
Place the beef, potatoes, and carrots into the slow cooker.
Sprinkle the onion soup mix evenly over the top.
Pour in the beef broth and gently stir to combine.
Cover and cook:
Low: 8–9 hours, or
High: 4–5 hours, until the beef is tender and the vegetables are cooked through.
Taste and season with salt and pepper if needed. Garnish with fresh parsley before serving.
