Ingredients
1 baguette, sliced into ½-inch-thick pieces
2 cups cherry tomatoes, diced
4 oz fresh mozzarella, cut into small cubes
¼ cup fresh basil, chopped
2 cloves garlic
2 tablespoons olive oil
1 tablespoon balsamic glaze
Salt and black pepper, to taste

Grated Parmesan cheese
Additional balsamic glaze for drizzling
Instructions
Preheat the oven to 400°F (200°C).
Arrange the baguette slices in a single layer on a baking sheet. Brush both sides lightly with olive oil.
Bake for 8–10 minutes, flipping halfway through, until the bread is golden and crisp.
While the bread is toasting, combine the diced cherry tomatoes, mozzarella, chopped basil, olive oil, balsamic glaze, salt, and pepper in a medium bowl. Toss gently to combine.
Cut the garlic cloves in half and rub the cut side over the warm toasted bread for a subtle garlic flavor.
Spoon the tomato and mozzarella mixture generously onto each toasted baguette slice.
Drizzle with a little extra balsamic glaze, if desired, and garnish with more fresh basil or grated Parmesan.
Serve immediately while the bread is crisp and the topping is fresh.
Tips
Let the tomato mixture sit for 10–15 minutes before serving to enhance the flavors.
For extra crunch, toast the bread on a grill instead of in the oven.
