Slow Cooker Amish Chicken Noodles

Ingredients
2 lbs boneless, skinless chicken breasts or thighs
1 medium onion, diced
3 cloves garlic, minced
6 cups chicken broth
1 teaspoon poultry seasoning
1 teaspoon dried parsley
½ teaspoon dried thyme
½ teaspoon black pepper
1 teaspoon salt (or to taste)
12 oz Amish-style egg noodles
1 can (10.5 oz) cream of chicken soup
½ cup unsalted butter
1 cup frozen peas (optional)
Instructions
Place the chicken in the slow cooker. Add the onion, garlic, chicken broth, poultry seasoning, parsley, thyme, pepper, and salt.
Cover and cook on Low for 6–8 hours or High for 3–4 hours, until the chicken is tender and fully cooked.
Remove the chicken from the slow cooker and shred it with two forks.
Return the shredded chicken to the slow cooker. Stir in the cream of chicken soup and butter until combined.
Add the egg noodles and stir well. Cover and cook on High for 30–45 minutes, stirring once or twice, until the noodles are tender.
If using peas, stir them in during the last 10 minutes of cooking.
Taste and adjust seasoning as needed before serving.
Tips
For extra creaminess, stir in ½ cup of heavy cream or sour cream before serving.
If the noodles absorb too much liquid, add an extra cup of warm chicken broth.
Serve with biscuits, dinner rolls, or a simple green salad.
