Servings: 4
Prep Time: 10 minutes
Chill Time: 30–60 minutes
Ingredients
1 cup plain nonfat Greek yogurt
1 cup low-fat cottage cheese
1 scoop (about 30 g) vanilla whey protein powder
1 cup frozen mixed berries (slightly thawed)
2–3 tablespoons powdered erythritol or monk fruit sweetener (adjust to taste)
1 teaspoon vanilla extract
1 tablespoon fresh lemon juice (optional, for brightness)
½ teaspoon xanthan gum (optional, for extra fluffiness)
Fresh berries, for garnish
Fresh mint leaves (optional)
Instructions
Add the Greek yogurt, cottage cheese, protein powder, sweetener, vanilla, and lemon juice to a blender or food processor. Blend until completely smooth.
Add the frozen berries and blend again until the mixture becomes thick, creamy, and fluffy.
If you’d like an extra-light mousse texture, sprinkle in the xanthan gum while blending for 20–30 seconds.
Divide the mixture evenly into four dessert cups.
Chill for 30–60 minutes, or enjoy immediately for a soft-serve consistency.
Garnish with a few fresh berries and mint before serving.
