Chicken, Spinach and Mushroom Low-Carb Oven Dish
Ingredients
2 large boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
8 oz (225 g) mushrooms, sliced
3 cups fresh spinach
3 cloves garlic, minced
1 teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon onion powder
Salt and black pepper, to taste
4 oz (115 g) cream cheese, softened
½ cup heavy cream
½ cup grated Parmesan cheese
1 cup shredded mozzarella cheese
Fresh parsley, chopped (optional, for garnish)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Season the chicken with salt, pepper, paprika, onion powder, and Italian seasoning.
Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for 5–6 minutes until lightly browned. Remove and set aside.
In the same skillet, sauté the mushrooms for 5 minutes until tender. Add the garlic and cook for 30 seconds.
Stir in the spinach and cook until just wilted.
Reduce the heat to low. Add the cream cheese, heavy cream, and Parmesan cheese. Stir until smooth and creamy.
Return the chicken to the skillet and mix everything together.
Transfer the mixture to the prepared baking dish. Sprinkle the mozzarella cheese evenly over the top.
Bake for 20–25 minutes, until the cheese is melted, bubbly, and lightly golden.
Let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
