Creamy Mushroom & Spinach Stuffed Sweet Potatoes
A cozy, satisfying meal featuring roasted sweet potatoes filled with a creamy mixture of sautéed mushrooms, spinach, garlic, and onion. Perfect as a vegetarian main course or a hearty side dish.

Ingredients
Sweet Potatoes
2–4 medium sweet potatoes
1 tbsp olive oil
Salt and black pepper, to taste
Creamy Mushroom & Spinach Filling
2 cups mushrooms, sliced (button or cremini)
2–3 cups fresh spinach
2 cloves garlic, minced
1 small onion, finely chopped
2 tbsp olive oil or butter
½ cup heavy cream, Greek yogurt, or a combination of both
¼ cup cream cheese (optional, for extra richness)
½ tsp dried thyme (optional)
¼ tsp paprika (optional)
Salt and black pepper, to taste
¼ cup grated Parmesan or mozzarella (optional)
Garnish
Fresh parsley or chives, chopped
Extra Parmesan, if desired
Instructions
Roast the sweet potatoes:
Preheat the oven to 400°F (200°C). Rub the sweet potatoes with olive oil and season with salt and pepper. Place them on a baking sheet and roast for 45–55 minutes, or until fork-tender.
Cook the vegetables:
While the potatoes roast, heat olive oil or butter in a large skillet over medium heat. Sauté the onion for 3–4 minutes until softened. Add the mushrooms and cook for 6–8 minutes until browned and their moisture has evaporated.
Add garlic and spinach:
Stir in the garlic and cook for 30 seconds. Add the spinach and cook until just wilted.
Make the creamy sauce:
Lower the heat and stir in the cream (or Greek yogurt), cream cheese (if using), thyme, paprika, salt, and pepper. Cook for 2–3 minutes until smooth and creamy. Stir in Parmesan or mozzarella if desired.
Stuff the potatoes:
Slice each roasted sweet potato lengthwise and gently fluff the inside with a fork. Spoon the creamy mushroom and spinach mixture generously into each potato.
Optional finishing step:
Sprinkle with a little extra cheese and broil for 2–3 minutes until melted and lightly golden.
Serve:
Garnish with fresh parsley or chives and serve hot.
