Soft-Boiled Egg & Avocado Power Bowl

Ingredients
2 eggs
½ avocado, sliced
4–5 cherry tomatoes, halved
2 tbsp crumbled feta cheese
1 handful walnut pieces
1 slice whole grain bread (optional, toasted)
Pinch of chili flakes
Black and white sesame seeds, for garnish
Salt and freshly ground black pepper, to taste
Instructions
Bring a small pot of water to a gentle boil. Carefully lower the eggs into the water and cook for 6½–7 minutes for soft-boiled yolks.
Transfer the eggs immediately to a bowl of ice water for 2–3 minutes. Peel and cut them in half.
If using the bread, toast it and place it in the bottom of a serving bowl or plate.
Arrange the sliced avocado, cherry tomatoes, feta cheese, and walnut pieces around the bowl.
Add the soft-boiled eggs on top.
Season with salt, black pepper, and a pinch of chili flakes.
Sprinkle with black and white sesame seeds for extra crunch and garnish.
Serve immediately as is, or drizzle with a little extra virgin olive oil and a squeeze of fresh lemon juice for added flavor.
Tips
Add baby spinach, arugula, or mixed greens for extra freshness.
Swap walnuts for almonds, pecans, or pumpkin seeds.
For more protein, add grilled chicken or smoked salmon.
