Ingredients

  • 4 boneless pork chops, about ¾–1 inch thick
  • ½ cup chicken broth
  • ⅓ cup Dijon mustard
  • ¼ cup honey
  • 2 tbsp yellow mustard
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • ½ tsp paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup heavy cream, optional
  • 1 tbsp cornstarch + 2 tbsp cold water, optional for thickening
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Season the pork: Pat the pork chops dry and season both sides with salt, pepper, paprika, onion powder, and thyme.
  2. Sear for extra flavor: Heat olive oil in a skillet over medium-high heat. Sear the pork chops for 1–2 minutes per side, just until golden brown. Transfer them to the slow cooker.
  3. Make the honey mustard sauce: Whisk together the chicken broth, Dijon mustard, yellow mustard, honey, and minced garlic.
  4. Slow cook: Pour the sauce over the pork chops. Cover and cook on LOW for 2½–3½ hours or HIGH for 1½–2 hours, until the pork reaches at least 145°F (63°C) internally.
  5. Make it creamy: If using heavy cream, remove the pork chops and stir the cream into the cooking liquid. For a thicker sauce, mix cornstarch with cold water and stir it in. Cover and cook on HIGH for 10–15 minutes, until thickened.
  6. Finish: Return the pork chops to the sauce and spoon the honey mustard sauce over them. Garnish with fresh parsley.
