Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • ½ small green cabbage, chopped
  • 1 can (14 oz / 400 g) diced tomatoes
  • 6 cups (1.4 L) vegetable broth
  • 1 teaspoon Italian seasoning
  • 1 bay leaf
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper, or to taste
  • 2–3 tablespoons fresh parsley, chopped

Instructions

  1. Sauté the vegetables:
    Heat the olive oil in a large soup pot over medium heat. Add the onion, carrots, and celery. Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften.
  2. Add the garlic:
    Stir in the minced garlic and cook for 30–60 seconds, until fragrant.
  3. Add the remaining ingredients:
    Add the chopped cabbage, diced tomatoes, vegetable broth, Italian seasoning, and bay leaf. Stir everything together.
  4. Simmer:
    Bring the soup to a boil, then reduce the heat to low. Cover partially and simmer for 25–30 minutes, or until the cabbage and vegetables are tender.
  5. Season:
    Remove the bay leaf. Taste the soup and adjust the salt and black pepper as needed.
  6. Garnish:
    Stir in the fresh parsley or sprinkle it over each bowl before serving.
  7. Serve:
    Enjoy hot on its own or with a slice of whole-grain bread.

Storage

Let the soup cool before refrigerating. Store in an airtight container for 3–4 days. It can also be frozen for up to 3 months.
