π Ingredients
For the beef:
1 lb (450 g) ground beef or thinly sliced beef
1 tbsp vegetable or sesame oil
2 cloves garlic, minced
1 tsp grated fresh ginger
1 tbsp soy sauce
Β½ tsp black pepper
For the fried rice:
4 cups cooked, cold white rice, preferably day-old
1 cup mixed vegetables (peas, carrots, corn, or green beans)
Β½ medium onion, diced
2 eggs, lightly beaten
2 tbsp soy sauce
1 tbsp oyster sauce, optional
1 tsp sesame oil
2 green onions, sliced
Β½ tsp salt, or to taste
ΒΌ tsp black pepper
π©βπ³ Instructions
Cook the beef: Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add the beef and cook for 5β7 minutes, breaking it apart as it browns.
Add the garlic and ginger and cook for about 30 seconds. Stir in 1 tablespoon soy sauce and black pepper. Cook for another minute, then transfer the beef to a plate.
Cook the vegetables: Add the onion and mixed vegetables to the same skillet. Stir-fry for 3β4 minutes until slightly tender.
Add the eggs: Push the vegetables to one side. Pour the beaten eggs into the empty side and scramble until just cooked.
Add the rice: Add the cold cooked rice and break up any clumps. Toss everything together and stir-fry for 3β5 minutes.
Season: Return the cooked beef to the skillet. Add 2 tablespoons soy sauce, oyster sauce if using, sesame oil, salt, and pepper. Toss thoroughly and cook for another 2 minutes.
Finish: Stir in the sliced green onions and remove from heat.

Serve hot with extra green onions and a drizzle of sesame oil. For a little heat, add sriracha or red pepper flakes.
