1Β½ lbs (680 g) smoked sausage or kielbasa, sliced into rounds
2 large yellow onions, thinly sliced
2 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1 tbsp brown sugar
1 tbsp Worcestershire sauce
Β½ tsp smoked paprika
Β½ tsp Italian seasoning
ΒΌ tsp black pepper
ΒΌ tsp salt, or to taste
Β½ cup beef or chicken broth
1 tbsp chopped fresh parsley, for garnish

Brown the sausage: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook for 4–5 minutes, turning occasionally, until nicely browned. Remove to a plate.
Cook the onions: Add the remaining olive oil and butter to the skillet. Add the sliced onions and cook over medium heat for 8–10 minutes, stirring occasionally, until soft and golden.
Add garlic and seasoning: Stir in the garlic, brown sugar, smoked paprika, Italian seasoning, black pepper, and salt. Cook for 1 minute.
Make the sauce: Pour in the broth and Worcestershire sauce. Scrape the browned bits from the bottom of the pan and simmer for 2–3 minutes.
Combine: Return the sausage to the skillet. Stir everything together and cook for another 5–7 minutes, until the onions are deeply caramelized and the sauce has thickened.
Garnish: Sprinkle with fresh parsley and serve hot.
