Ingredients
2½ lb (1.1 kg) baby potatoes, halved
1 large onion, thinly sliced
5–6 cloves garlic, minced
3 tbsp olive oil or melted butter
1 tsp salt
½ tsp black pepper
1 tsp dried thyme
1 tsp dried parsley
½ tsp paprika
½ cup (120 ml) chicken or vegetable broth
2 tbsp grated Parmesan, optional
Fresh parsley, for garnish
Instructions
Prepare the potatoes: Wash and halve the potatoes. Leave the skins on for extra flavor.
Layer: Add the potatoes and sliced onion to the slow cooker. Sprinkle the minced garlic, salt, pepper, thyme, parsley, and paprika over everything.
Add the liquid: Drizzle with olive oil or melted butter and pour in the broth. Toss gently to coat.
Cook: Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the potatoes are fork-tender.
Finish: Sprinkle with Parmesan, if using. Cover for another 5 minutes to let it melt.
Serve: Garnish with fresh parsley and serve hot.
Tip: For beautifully browned edges, transfer the cooked potatoes to a baking sheet and broil for 3–5 minutes before serving.
