A creamy, old-fashioned frozen fruit salad thatโ€™s sweet, refreshing, and perfect for holidays, potlucks, or a make-ahead dessert!
Ingredients
1 (20 oz) can crushed pineapple, well drained
1 cup sliced strawberries, fresh or frozen
1 cup halved seedless grapes
1 cup chopped peaches, drained if canned
1/2 cup maraschino cherries, drained and chopped
1/2 cup chopped pecans or walnuts
1 cup mini marshmallows
1 cup heavy whipping cream
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup sour cream
1 tbsp lemon juice
Instructions
Prepare the fruit: Drain the pineapple and cherries very well. Pat excess moisture from the fruit to help prevent the salad from becoming icy.
Make the cream mixture: In a large bowl, whip the heavy cream with powdered sugar and vanilla until soft, fluffy peaks form.
Gently fold in the sour cream and lemon juice until smooth.
Combine: Add the pineapple, strawberries, grapes, peaches, cherries, pecans, and mini marshmallows. Fold gently until everything is evenly coated.
Freeze: Spoon the mixture into a lightly greased 9ร—13-inch dish or individual muffin cups. Cover tightly with plastic wrap.
Freeze for at least 4โ€“6 hours, preferably overnight.
Serve: Let the frozen fruit salad sit at room temperature for about 10โ€“15 minutes before serving so it softens slightly. Cut into squares and serve.
