Ingredients

Salad

  • 1 lb cooked, peeled, and chopped jumbo shrimp
  • ¼ cup finely chopped red onion
  • 1 large tomato, diced
  • 1 large avocado, diced
  • 1 teaspoon extra-virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon chopped fresh cilantro
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground cumin, optional
  • 1 small jalapeño, finely minced, optional

Lime Dressing

  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon honey or maple syrup, optional
  • ½ teaspoon Dijon mustard
  • 1 small garlic clove, minced
  • Pinch of salt and black pepper

Instructions

  1. Make the dressing: In a small bowl, whisk together the lime juice, olive oil, honey, Dijon mustard, garlic, salt, and pepper.
  2. Combine the salad: Add the chopped shrimp, red onion, tomato, avocado, and cilantro to a large bowl.
  3. Season: Add 1 teaspoon olive oil, 2 tablespoons lime juice, salt, black pepper, garlic powder, and cumin. Add jalapeño if desired.
  4. Toss gently: Pour the dressing over the shrimp mixture and gently fold everything together. Be careful not to mash the avocado.
  5. Chill: Cover and refrigerate for 15–20 minutes to allow the flavors to blend.
  6. Serve: Spoon into lettuce cups, serve over mixed greens, or enjoy on its own with lime wedges.
