Cozy Homestead Noodles Romanoff

🍜 Cozy Homestead Noodles Romanoff
Creamy, cheesy, buttery noodles with garlic and a hint of sour cream—an easy old-fashioned comfort-food side dish.
🛒 Ingredients
12 oz (340 g) wide egg noodles
4 tbsp butter
3 cloves garlic, minced
1 cup sour cream
½ cup cream cheese, softened
1 cup shredded sharp cheddar cheese
¼ cup grated Parmesan cheese
½ tsp onion powder
½ tsp garlic powder
½ tsp salt, or to taste
¼ tsp black pepper
2 tbsp chopped fresh parsley
¼ cup reserved pasta water, as needed
👩‍🍳 Instructions
Cook the noodles: Bring a large pot of salted water to a boil. Cook the egg noodles according to the package directions until just tender. Reserve about ¼ cup pasta water, then drain.
Make the buttery garlic base: While the noodles cook, melt the butter in a large skillet or saucepan over medium-low heat. Add the minced garlic and cook for about 30–60 seconds, just until fragrant.
Make it creamy: Reduce the heat to low. Stir in the sour cream and softened cream cheese until smooth.
Add the cheddar, Parmesan, onion powder, garlic powder, salt, and pepper. Stir gently until the cheeses melt and the sauce becomes creamy.
Combine: Add the drained noodles and toss gently until completely coated. If the sauce is too thick, add reserved pasta water, a tablespoon at a time, until you reach your preferred consistency.
Finish: Stir in the fresh parsley and taste for seasoning. Add more salt or pepper if needed.
Serve: Transfer to a serving dish and sprinkle with a little extra Parmesan and parsley.
🧀 Optional Oven-Baked Version
For a golden cheesy top, transfer the finished noodles to a greased baking dish, sprinkle with ½ cup additional shredded cheddar, and bake at 375°F (190°C) for 15–20 minutes, until hot and bubbly.
