Ingredients
20–24 large white or cremini mushrooms
2 tbsp olive oil
3 tbsp butter
3 cloves garlic, minced
¼ cup finely chopped onion
4 oz cream cheese, softened
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
¼ cup breadcrumbs
2 tbsp fresh parsley, chopped
½ tsp Italian seasoning
¼ tsp salt
¼ tsp black pepper
¼ tsp red pepper flakes, optional
Instructions
Prepare the mushrooms:
Preheat oven to 375°F (190°C). Gently wipe the mushrooms clean. Remove the stems and finely chop them. Arrange the mushroom caps in a lightly greased baking dish.
Cook the filling:
Heat the olive oil and butter in a skillet over medium heat. Add the chopped mushroom stems and onion. Cook for 4–5 minutes, until softened. Add the garlic and cook for another 30 seconds.
Make the mixture:
Remove from heat and stir in the cream cheese, mozzarella, Parmesan, breadcrumbs, parsley, Italian seasoning, salt, pepper, and red pepper flakes. Mix until well combined.
Stuff the mushrooms:
Spoon the filling generously into each mushroom cap, gently pressing it down so it stays in place.
Bake:
Bake uncovered for 20–25 minutes, until the mushrooms are tender and the tops are golden and bubbly.
Serve:
Sprinkle with additional parsley and Parmesan if desired. Serve hot.

For an extra-crispy topping, mix 2 tablespoons Parmesan + 1 tablespoon breadcrumbs + 1 teaspoon melted butter and sprinkle over the mushrooms before baking.
