Hearty Cabbage Soup
A wholesome, comforting cabbage soup that’s packed with vegetables and full of flavor. It’s perfect for a light lunch or dinner.
Ingredients
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
½ medium green cabbage, chopped
1 can (400 g/14 oz) diced tomatoes
6 cups (1.5 L) vegetable or chicken broth
2 medium potatoes, peeled and diced (optional)
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon Italian seasoning
2 bay leaves
Salt and black pepper, to taste
2 tablespoons chopped fresh parsley
Instructions
Heat the olive oil in a large pot over medium heat.
Add the onion, carrots, and celery, and cook for 5–7 minutes until softened.
Stir in the garlic and cook for 1 minute until fragrant.
Add the cabbage, diced tomatoes, potatoes (if using), broth, paprika, thyme, Italian seasoning, and bay leaves.
Bring the soup to a boil, then reduce the heat to low.
Cover and simmer for 25–30 minutes, or until the vegetables are tender.
Remove the bay leaves and season with salt and black pepper to taste.
Stir in the chopped parsley just before serving.
