These easy Southern-style tomato bites are packed with fresh flavor and make a perfect appetizer, snack, or side dish.
Ingredients
3 large ripe tomatoes, sliced into ½-inch rounds
½ cup mayonnaise
1 cup shredded sharp cheddar cheese
¼ cup grated Parmesan cheese
2 green onions, thinly sliced
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon smoked paprika
Salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley or chives (optional, for garnish)
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
Slice the tomatoes and gently pat them dry with paper towels to remove excess moisture.
Arrange the tomato slices in a single layer on the prepared baking sheet. Lightly season with salt and pepper.
In a medium bowl, combine the mayonnaise, cheddar cheese, Parmesan, green onions, garlic powder, onion powder, and smoked paprika until well mixed.
Spoon the cheese mixture evenly over each tomato slice.
Bake for 12–15 minutes, or until the cheese is melted and bubbly.
For a golden, lightly browned top, broil for 1–2 minutes, watching carefully to prevent burning.
Garnish with chopped parsley or chives, if desired, and serve immediately.
Tips
Use firm, ripe tomatoes to help them hold their shape while baking.
Add a pinch of cayenne pepper or a few crumbled bacon pieces for extra Southern flavor.
