Creamy Seafood Salad
Ingredients
1 lb imitation crab meat or cooked seafood mix, chopped
1/2 lb cooked small shrimp, peeled and deveined
2 celery stalks, finely diced
1/4 cup red onion, finely diced
2 green onions, thinly sliced
1/4 cup sweet pickle relish
1 cup mayonnaise
2 tablespoons sour cream
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon Old Bay seasoning
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and black pepper, to taste
1 tablespoon chopped fresh dill or parsley (optional)
Instructions
In a large bowl, combine the chopped imitation crab, cooked shrimp, celery, red onion, green onions, and sweet pickle relish.
In a separate bowl, whisk together the mayonnaise, sour cream, lemon juice, Dijon mustard, Old Bay seasoning, garlic powder, paprika, and fresh dill or parsley, if using.
Pour the dressing over the seafood mixture and gently fold everything together until evenly coated.
Taste and season with salt and black pepper as needed.
Cover and refrigerate for at least 1 hour before serving to allow the flavors to develop.
Stir gently before serving.
Serving Suggestions
Serve chilled on a bed of lettuce.
Spoon into croissants or sandwich rolls for seafood salad sandwiches.
Enjoy with crackers, cucumber slices, or stuffed into avocado halves.
