Homemade Cauliflower “Mac & Cheese”
This creamy, cheesy cauliflower bake delivers all the comfort of classic mac and cheese—without the pasta! It’s quick, easy, beginner-friendly, and makes a delicious low-carb side dish or light meal.
Ingredients
1 large head cauliflower, cut into bite-sized florets
2 tablespoons butter
2 cloves garlic, minced
2 tablespoons all-purpose flour (or 1 tablespoon cream cheese for a low-carb version)
1½ cups whole milk
2 cups shredded sharp cheddar cheese
½ cup grated Parmesan cheese
½ teaspoon onion powder
½ teaspoon paprika
Salt and black pepper, to taste
½ teaspoon Dijon mustard (optional)
2 tablespoons chopped fresh parsley, for garnish
Optional Topping:
½ cup shredded mozzarella cheese
¼ cup crushed pork rinds (for keto) or panko breadcrumbs
1 tablespoon melted butter
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish.
Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5–6 minutes, just until tender-crisp. Drain well and pat dry with paper towels.
In a saucepan over medium heat, melt the butter. Add the garlic and cook for about 30 seconds until fragrant.
Stir in the flour and cook for 1 minute. Gradually whisk in the milk until smooth.
Simmer for 2–3 minutes until the sauce begins to thicken.
Reduce the heat to low and stir in the cheddar, Parmesan, onion powder, paprika, Dijon mustard (if using), salt, and pepper until the cheese is fully melted and the sauce is smooth.
Fold the cauliflower into the cheese sauce until evenly coated.
Transfer the mixture to the prepared baking dish. Sprinkle with mozzarella and the optional topping, if desired.
Bake for 20–25 minutes, or until bubbly and golden on top.
Let stand for 5 minutes before serving. Garnish with chopped parsley.
Tips
Add cooked bacon or diced ham for extra flavor.
Mix in steamed broccoli for a cheesy vegetable bake.
Store leftovers in the refrigerator for up to 3 days and reheat in the oven or microwave.
