Mongolian Ground Beef Noodles
Ingredients
8 oz (225 g) linguine, spaghetti, or lo mein noodles
1 lb (450 g) lean ground beef
1 tablespoon vegetable or sesame oil
4 cloves garlic, minced
1 teaspoon fresh ginger, grated
½ cup low-sodium soy sauce
⅓ cup brown sugar
½ cup beef broth
1 tablespoon hoisin sauce (optional, for extra flavor)
1 tablespoon cornstarch
2 tablespoons water
½ teaspoon crushed red pepper flakes (optional)
3 green onions, sliced
1 teaspoon sesame seeds (optional)
Instructions
Cook the noodles according to the package directions. Drain and set aside.
Heat the oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess grease.
Stir in the garlic and ginger, and cook for 30 seconds until fragrant.
Add the soy sauce, brown sugar, beef broth, hoisin sauce (if using), and red pepper flakes. Stir well and bring to a gentle simmer.
In a small bowl, whisk together the cornstarch and water to make a slurry. Stir it into the skillet and cook for 1–2 minutes, until the sauce thickens.
Add the cooked noodles and toss until they’re evenly coated in the sauce.
Sprinkle with sliced green onions and sesame seeds before serving.
