🫐 Soothing Blueberry Juice
Ingredients
- 2 cups fresh or frozen blueberries
- 3 cups cold water
- 1 tablespoon fresh lemon juice
- 1–2 tablespoons honey, maple syrup, or sweetener, to taste
- ½ teaspoon freshly grated ginger, optional
- ½ teaspoon vanilla extract, optional
- Ice, for serving
- Fresh mint, for garnish, optional
Instructions
- Blend:
Add the blueberries and water to a blender. Blend for 30–60 seconds until smooth. - Strain:
Pour the mixture through a fine-mesh strainer into a large pitcher, pressing gently with a spoon to extract the juice. For a thicker, more fiber-rich drink, you can skip straining. - Flavor:
Stir in the lemon juice, honey, ginger, and vanilla extract if using. - Chill:
Refrigerate for at least 30 minutes, or serve immediately over plenty of ice. - Serve:
Garnish with fresh blueberries and mint. Stir well before serving.
Storage
Keep refrigerated in a covered pitcher for up to 2–3 days. Shake or stir before drinking.
Optional Variation
For a sparkling version, replace 1 cup of the water with chilled sparkling water just before serving.
