Ingredients

  • 1 cup (226 g) unsalted butter, softened
  • ½ cup (100 g) granulated sugar
  • ¼ cup (55 g) packed light brown sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups (250 g) all-purpose flour
  • ¾ cup (130 g) butterscotch chips, finely chopped or mini chips
  • 2 tablespoons cornstarch
  • Optional: ½ cup butterscotch chips for drizzling

Instructions

1. Make the Dough

  1. In a large bowl, beat the softened butter, granulated sugar, and brown sugar for 2–3 minutes, until light and creamy.
  2. Mix in the vanilla and salt.
  3. In a separate bowl, whisk together the flour and cornstarch.
  4. Gradually add the dry ingredients to the butter mixture, mixing just until a soft dough forms.
  5. Fold in the butterscotch chips.

2. Chill

  1. Divide the dough in half and shape each portion into a log about 2 inches (5 cm) wide.
  2. Wrap the logs tightly in plastic wrap.
  3. Refrigerate for 30–45 minutes, until firm.

3. Slice & Bake

  1. Preheat the oven to 350°F (175°C).
  2. Line baking sheets with parchment paper.
  3. Slice the chilled dough into rounds about ¼ inch (6 mm) thick.
  4. Arrange the cookies about 1 inch apart on the baking sheets.
  5. Bake for 10–14 minutes, until the edges are lightly golden. Don’t overbake.
  6. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack.

4. Optional Butterscotch Drizzle

  1. Melt the additional butterscotch chips gently in the microwave in 15–20 second intervals, stirring between each.
  2. Drizzle over the cooled cookies.
  3. Allow the drizzle to set before serving.
