4 boneless, skinless chicken breasts
6 slices bacon, chopped
2 tbsp olive oil
4 cloves garlic, minced
1 small onion, finely chopped
1 cup heavy cream
½ cup chicken broth
½ cup grated Parmesan cheese
1 tsp Italian seasoning
½ tsp paprika
½ tsp salt
½ tsp black pepper
½ tsp onion powder
2 cups fresh spinach, optional
2 tbsp chopped fresh parsley

Cook the bacon:
Heat a large skillet over medium heat. Add chopped bacon and cook until crispy. Transfer to a paper towel-lined plate, leaving about 1 tablespoon of bacon grease in the skillet.
Season the chicken:
Pat chicken dry and season both sides with paprika, Italian seasoning, salt, pepper, and onion powder.
Brown the chicken:
Add olive oil to the skillet. Cook chicken over medium-high heat for about 5–6 minutes per side, or until golden brown and cooked through. Remove and set aside.
Sauté the aromatics:
Reduce heat to medium. Add onion and cook for 2–3 minutes. Add minced garlic and cook for about 30 seconds, until fragrant.
Make the sauce:
Pour in chicken broth, scraping up the browned bits from the bottom. Stir in heavy cream and Parmesan. Simmer gently for 3–5 minutes, stirring until the sauce thickens.
Add spinach and bacon:
Stir in spinach, if using, and half of the crispy bacon. Cook until the spinach wilts.
Finish the chicken:
Return the chicken to the skillet and spoon the creamy garlic sauce over it. Simmer for another 2–3 minutes so the flavors come together.
Serve:
Sprinkle with remaining crispy bacon, Parmesan, and fresh parsley.
