🍄 Crockpot Creamy Mushroom Beef
🛒 Ingredients
2 lbs (900 g) beef chuck roast or stew meat, cut into bite-size pieces
1 tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
8 oz (225 g) mushrooms, sliced
1 can (10.5 oz / 298 g) cream of mushroom soup
1 cup beef broth
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp onion powder
½ tsp paprika
½ tsp black pepper
½ tsp salt, or to taste
½ cup sour cream
4 oz (115 g) cream cheese, softened
2 tbsp chopped fresh parsley, optional
Cooked egg noodles, mashed potatoes, or rice, for serving
👩🍳 Instructions
Brown the beef: Heat olive oil in a large skillet over medium-high heat. Season beef with salt and pepper and sear for 2–3 minutes per side. Transfer to the crockpot.
Add the vegetables: Add onion, garlic, and sliced mushrooms to the crockpot.
Make the sauce: Whisk together cream of mushroom soup, beef broth, Worcestershire sauce, thyme, onion powder, paprika, and black pepper. Pour over the beef and mushrooms.
Slow cook: Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is very tender.
Make it creamy: About 20–30 minutes before serving, stir in the softened cream cheese and sour cream. Cover and cook until melted and creamy.
Finish: Stir well and taste for seasoning. Sprinkle with fresh parsley if desired.
Serve: Spoon the creamy mushroom beef over egg noodles, mashed potatoes, or rice.
