🛒 Ingredients
For the Pork
- 1½–2 lb pork tenderloin
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried thyme
For the Maple Mustard Glaze
- ¼ cup pure maple syrup
- 2 tbsp Dijon mustard
- 1 tbsp whole-grain mustard
- 1 tbsp apple cider vinegar
- 2 cloves garlic, minced
- 1 tbsp olive oil
- ¼ tsp smoked paprika, optional

- Preheat the oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
- Prepare the pork: Pat the tenderloin dry with paper towels. Rub it all over with olive oil, then season with salt, pepper, garlic powder, onion powder, and thyme.
- Make the glaze: In a small bowl, whisk together the maple syrup, Dijon mustard, whole-grain mustard, apple cider vinegar, minced garlic, olive oil, and smoked paprika.
- Sear for extra flavor (optional): Heat a skillet over medium-high heat and sear the pork for about 2 minutes per side, until lightly browned.
- Glaze the pork: Place the tenderloin in the prepared baking dish and brush generously with the maple mustard mixture. Reserve a little glaze for later.
- Bake uncovered for approximately 20–30 minutes, depending on the thickness of the tenderloin. Brush with the remaining glaze halfway through cooking.
- Check the temperature: The thickest part should reach 145°F (63°C). Avoid overcooking so the pork stays juicy.
- Rest: Remove from the oven and loosely cover with foil. Let rest for 5–10 minutes before slicing.
- Serve: Slice into medallions and spoon any pan juices over the top. Garnish with fresh parsley or thyme if desired.
