🛒 Ingredients

For the Meatloaf

  • 1½ lbs ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 large egg
  • ¾ cup breadcrumbs
  • ½ cup milk
  • ½ cup shredded cheddar cheese
  • ¼ cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp yellow mustard
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper

For the Potato Topping

  • 2 lbs potatoes, peeled and thinly sliced
  • 3 tbsp butter
  • ½ cup sour cream
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Cowboy Topping

  • 6 slices bacon, cooked and crumbled
  • ½ cup shredded cheddar or Monterey Jack cheese
  • ¼ cup sliced green onions
  • ½ cup baked beans, optional

Meatloaf Glaze

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce

1. Prepare the potatoes

Preheat oven to 375°F (190°C).

Place sliced potatoes in a large pot, cover with salted water, and boil for 8–10 minutes, just until slightly tender. Drain well.

2. Make the meatloaf mixture

In a large bowl, combine ground beef, onion, garlic, egg, breadcrumbs, milk, cheddar, ketchup, Worcestershire sauce, mustard, smoked paprika, salt, and pepper.

Mix gently until just combined. Do not overmix.

3. Assemble

Grease a 9×13-inch baking dish.

Press the meat mixture evenly into the bottom of the dish. If using baked beans, spread them over the meatloaf layer.

Arrange the partially cooked potato slices evenly over the top.

4. Make the creamy potato topping

Mix melted butter, sour cream, milk, garlic powder, salt, and pepper. Spoon or drizzle evenly over the potatoes.

Cover tightly with foil.

5. Bake

Bake for 35 minutes.

Remove the foil and continue baking for 15–20 minutes, or until the meatloaf reaches 160°F (71°C) in the center and the potatoes are tender.

6. Add the cowboy topping

Mix ketchup, brown sugar, mustard, and Worcestershire sauce.

Spread the glaze over the potatoes/meatloaf. Sprinkle with bacon and the remaining cheese.

Return to the oven uncovered for 5–10 minutes, until the cheese is melted and bubbly.

7. Rest and serve

Let the casserole rest for 10 minutes before slicing. Sprinkle with green onions and serve hot.
