1 lb lean ground beef
2 large russet potatoes, peeled and diced into ½-inch cubes
2 smoked Hatch green chiles, diced
1 medium onion, chopped
2 cloves garlic, minced
2 tbsp all-purpose flour
2 tbsp vegetable oil
2 cups beef broth
1 cup tomato sauce
1 tsp ground cumin
1 tsp chili powder
½ tsp smoked paprika
½ tsp dried oregano
1 tsp salt, or to taste
½ tsp black pepper
½ tsp garlic powder
1 tbsp chopped fresh cilantro
1–2 tbsp water, if needed
For Serving:
8–10 flour tortillas, warmed
Fresh cilantro
Diced onion
Lime wedges, optional

Brown the beef:
Heat the oil in a large deep skillet or Dutch oven over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it apart as it cooks. Drain excess grease if necessary.
Add the vegetables:
Stir in the chopped onion and diced Hatch green chiles. Cook for 3–4 minutes until the onion begins to soften. Add the minced garlic and cook for another 30 seconds.
Season:
Add the cumin, chili powder, smoked paprika, oregano, garlic powder, salt, and black pepper. Stir well to coat the beef and vegetables.
Make the gravy:
Sprinkle the flour over the beef mixture and stir continuously for about 1 minute. Slowly pour in the beef broth while stirring to prevent lumps. Add the tomato sauce and mix well.
Add the potatoes:
Stir in the diced potatoes. Bring the mixture to a gentle boil, then reduce the heat to low.
Simmer:
Cover and simmer for 20–25 minutes, stirring occasionally, until the potatoes are fork-tender and the gravy has thickened. If the stew becomes too thick, add a splash of water or broth.
Finish:

Warm the tortillas:
Heat flour tortillas in a dry skillet for about 20–30 seconds per side, or until soft and warm. Keep them covered with a clean kitchen towel.
