1 cup soft Medjool dates, pitted
1 cup walnuts
3 tablespoons unsweetened cocoa powder
1/2 cup old-fashioned rolled oats
2 tablespoons creamy peanut butter or almond butter
1 tablespoon honey or pure maple syrup
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
Pinch of salt
2 tablespoons mini chocolate chips, optional
Instructions
Soften the dates: If your dates are firm or dry, place them in warm water for 10–15 minutes. Drain well and pat dry.
Process the walnuts: Add the walnuts and oats to a food processor. Pulse until finely chopped but not completely powdered.
Add the chocolate ingredients: Add the dates, cocoa powder, nut butter, honey or maple syrup, vanilla, cinnamon, and salt.
Blend: Pulse several times until the mixture becomes sticky and holds together when pressed between your fingers. Don’t over-process—you want some small walnut pieces for texture.
Add chocolate chips: Stir or pulse in the mini chocolate chips if using.
Roll: Scoop out about 1 tablespoon of mixture at a time and roll firmly between your palms to make balls.
Chill: Place the bites on a parchment-lined plate or tray and refrigerate for 30 minutes to firm up.
Yield
Makes about 14–16 energy bites.
Storage
Store in an airtight container in the refrigerator for up to 1 week. They can also be frozen for longer storage.
