Ingredients

For the Wontons

  • 30 wonton wrappers
  • 1 lb Monterey Jack cheese, cut into 30 strips, about ½–1½ inches long
  • 1 can (4 oz) diced green chiles, well drained
  • 2–3 fresh hot green chiles or jalapeños, seeded and cut into thin strips
  • 1 egg
  • 1 tablespoon water
  • Vegetable or canola oil, for frying
  • Salt, optional

Jalapeño Soy Sauce

  • ½ cup soy sauce
  • 1 fresh jalapeño, thinly sliced
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon toasted sesame oil
  • 1 clove garlic, finely minced
  • 1 teaspoon grated fresh ginger
  • 1 green onion, thinly sliced

Instructions

1. Prepare the Filling

Drain the green chiles thoroughly so the wontons don’t become soggy.

Place a strip of Monterey Jack cheese in the center of each wonton wrapper. Add a few strips of green chile and hot chile alongside the cheese.

2. Seal the Wontons

Whisk the egg with 1 tablespoon water to make an egg wash.

Brush the edges of each wrapper lightly with egg wash. Fold the wrapper over the filling to form a triangle, pressing firmly around the edges to remove air and seal completely.

For extra security, press the edges with the tines of a fork.

3. Heat the Oil

Pour about 2 inches of oil into a deep, heavy-bottomed skillet or saucepan.

Heat to 350°F (175°C). Use a thermometer if possible; keeping the oil at the right temperature helps the wontons become crisp without burning.

4. Fry

Fry the wontons in small batches, being careful not to overcrowd the pan.

Cook for about 2–3 minutes per side, turning once, until golden brown and crisp.

Transfer to a paper-towel-lined plate or wire rack to drain. Allow the oil to return to 350°F between batches.

5. Make the Jalapeño Soy Sauce

In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, garlic and ginger.

Stir in the sliced jalapeño and green onion. Let the sauce sit for 10 minutes before serving so the flavors can develop.

6. Serve

Serve the hot, crispy chile relleno wontons immediately with the jalapeño soy sauce for dipping.

Tip: For an extra-creamy filling, mix a little cream cheese with the Monterey Jack before stuffing. You can also add cilantro or finely diced roasted poblano peppers for more chile relleno flavor.
