🍖 Slow Cooker BBQ Meatloaf
Tender, juicy meatloaf cooked low and slow in a sweet, tangy BBQ glaze. It’s an easy comfort-food dinner with minimal prep!
Ingredients
For the meatloaf:
2 lbs ground beef (80/20 works well)
1 small onion, finely diced
2 cloves garlic, minced
1 cup breadcrumbs
2 large eggs
½ cup milk
¼ cup ketchup
2 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
1 tsp smoked paprika
1 tsp Italian seasoning
For the BBQ glaze:
¾ cup BBQ sauce
¼ cup ketchup
2 tbsp brown sugar
1 tbsp Worcestershire sauce
1 tsp yellow mustard
Instructions
Prepare the slow cooker: Line a 6-quart slow cooker with parchment paper or lightly spray it with nonstick cooking spray.
Make the mixture: In a large bowl, combine the ground beef, onion, garlic, breadcrumbs, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, smoked paprika, and Italian seasoning. Mix gently until everything is just combined. Avoid overmixing.
Shape the meatloaf: Form the mixture into a loaf approximately 8–9 inches long and place it in the slow cooker.
Make the glaze: Stir together the BBQ sauce, ketchup, brown sugar, Worcestershire sauce, and mustard.
Glaze: Spread about half of the BBQ mixture over the top of the meatloaf.
Cook: Cover and cook on LOW for 5–6 hours, or until the center reaches 160°F (71°C).
Add more sauce: During the final 30 minutes, spread the remaining BBQ glaze over the meatloaf.
Rest: Carefully lift the meatloaf out using the parchment paper or a large spatula. Let it rest for 10–15 minutes before slicing.
