Tomato Basil Garlic Bread
Ingredients
1 large baguette or Italian loaf, sliced into 1-inch thick pieces
2–3 ripe tomatoes, sliced into rounds
3–4 cloves garlic, minced
½ cup (1 stick/115 g) unsalted butter, softened
2 tablespoons extra-virgin olive oil
¼ cup fresh basil, chopped, plus extra leaves for garnish
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
½ teaspoon Italian seasoning
Salt and freshly ground black pepper, to taste
Optional: pinch of red pepper flakes or a drizzle of balsamic glaze
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
In a small bowl, combine the softened butter, minced garlic, olive oil, chopped basil, Italian seasoning, salt, and black pepper.
Spread the garlic butter mixture generously over each slice of bread and arrange them on the prepared baking sheet.
Top each slice with a tomato round. Sprinkle with mozzarella and Parmesan cheese.
Bake for 10–12 minutes, until the cheese is melted and bubbly.
For a golden, lightly browned top, broil for 1–2 minutes, watching carefully to prevent burning.
Remove from the oven and garnish with extra fresh basil. Add a pinch of red pepper flakes or a drizzle of balsamic glaze if desired.
Serving Suggestions
Serve warm as an appetizer, side dish with pasta or soup, or alongside grilled chicken or salads.
