Ingredients
2½ cups fresh blackberries (washed and drained)
1 cup granulated sugar, divided
1 cup all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
1 cup whole milk
½ cup (1 stick) unsalted butter
Instructions
Preheat your oven to 350°F (175°C).
Place the butter in a 9×13-inch baking dish and let it melt in the oven while it preheats. Remove the dish once the butter has completely melted.
In a large bowl, whisk together the flour, ¾ cup of the sugar, baking powder, and salt.
Stir in the milk until you have a smooth batter. Do not overmix.
Carefully pour the batter evenly over the melted butter. Do not stir.
Toss the blackberries with the remaining ¼ cup sugar, then spoon them evenly over the batter. Again, do not stir. As it bakes, the batter will rise around the fruit, creating a delicious cobbler.
Bake for 45–50 minutes, or until the top is golden brown and a toothpick inserted into the cake portion comes out clean.
Let the cobbler cool for 10–15 minutes before serving.
Serving Suggestions
Serve warm with a scoop of vanilla ice cream, whipped cream, or a drizzle of fresh cream. Leftovers can be covered and stored in the refrigerator for up to 3 days and reheated before serving.
